Lost my she-bang!!

I've been using the excuse that Monday night = dance night. Currently class is 5pm-6pm, which actually means we are out if the house 4:30pm-6:30pm or thereabouts. So preparing dinner is difficult.

But in reality, even if we are at home, with a newborn that nurses every two hours, there is really not much time between feedings anyway to prep much.....I am scraping the barrel for easy to prepare meals that are kinda healthy AND both my kids and my parents will eat!!!

So the upshot of it all, was curry(out if the freezer) Monday night; grilled chicken breast, mashed potato, carrot, frozen peas& beans on Tuesday night; and Costco pizza, with salad and soup (celery, also pre-frozen just add milk and stock cubes;) tonight.

And somehow we are now over the hump--two more meals to get through!! I can do it ;)

Weekend BBQ

Sat night J brought out the BBQ, and I brought out our Aussie beef (prime rib fillet). Served with whole baked potatoes, mushrooms, butter corn, and French-stick (bread).

Sun (lunch/night) I intended on cooking up the italian sausages we bought at Costco, but I awoke to a breakfast of eggs and breakfast sausages so that idea was scrapped. We did lunch at sushi-ro, and since mum and dad were still kinda full, dinner was slap-happy leftovers of fried rice, somen noodles, salad and a baguette.

I-can-do-it

Burst of energy Thursday led to the production of possibly the best looking (and yummy tasting, of course) quiche I have ever made--photos below!! I took care to use more pastry than usual (I tend to skimp, and try to spread it to one and a half quiche dishes worth). This time I made a double batch for two quiches:

* ham and cheese quiche
* shimeji mushrooms, spinach, onion and cheese quiche.
* last minute inclusion of cream-of corn Chinese egg drop soup.
Served with side salad.

Friday night and energy was low (after a very emotional day 9 of baby's life and our troubled-nursing career) so it was rice for dinner:

* took advantage of the last two eggplant, and bulked it up with carrots, onion and shiitake in a repeat of the other bight's dish (http://cookpad.com/recipe/880838)
* shirasu rice (kids, round 1 meal)
* wakame miso soup
* leftover pumpkin nimono
* buri (yellowtail) which J brought home with him (had no fish in house!!) and cooked in fry pan with s+p
* kimchee, umeboshi, natto as desired.

Eating with a newborn

And my parents here.
I got out of hospital Monday, baby girl (still no-name) in tow, and found myself at home with 4 adults, three kids and two nationalities (and culinary sets) to deal with. My folks have been awesome in helping with meal prep, but we still need to decide what to make!!

Mon: the ol' go-to, Spag Bol ( with hidden carrots, onion, spinach)
Tues: curry ;)
Wed: Hot dog sausages, mashed potato, pumpkin nimono, brocolli. With a bagette (aka "French stick" to my folks, and me until coming to Japan ;)

Three days down.....now, what about the rest of the week??hhmmmm
